Recently there were a bunch of wild chanterelle mushrooms in my organic food box delivery. I really like mushrooms but I've never made mushroom gravy before. I looked up a recipe for it and adapted it to the ingredients I had on hand. The finished meal: pan-fried pork (raised in Metchosin, a rural area very close to my home), brown rice, steamed kale, and delicious wild mushroom and leek gravy. It tasted amazing!!
